Micros/Aloha database integration

I've posted in the Micros and Aloha forums, but I figured I would try this too :P

I'm a CS student at UT Austin needing help with a senior project (don't worry, we are encouraged to seek outside help and experience).  My professor and I have a small budget to help me get the specific information I need so that I can program the rest of it.

I am trying to build a plug-in that goes directly to the Micros/Aloha databases and extracts files of interest.  I'm having difficulty coming up with a test bed, trial software, or database table layout/schema. I'm trying to build a real-time accounting software for the restaurant industry that pulls transaction details from the database in regular intervals: transaction data being item detail, timestamp, revenue, etc and regular pulls being more than just the daily grind file that's produced...probably every 15 minutes or so.

Here are the questions that we are needing answered, and willing to pay for specific scripts/code lines to get this done:

1. What is the best way to map Aloha databases and are there multiple versions I need to be concerned with mapping?
2. Will I need a testbed or trial software to really make this thing work, and if so is there a way to get it for el cheapo or, even better, the student price of free?
3. Are there any people that have already done this and might be able to help us shorten the learning curve?
