we have a batch file that runs as part of the End-Of-Day (EOD) process that zips and moves a copy of the sub-directory to a Network Attached Storage device.

Make use of the Winhook setting in the Store Setting dialog, under System -> End of Day

and when the store burns down is that NAS in the store

I use the same winhook.bat setup that was originally set to work with "Direct to disc"  Adaptec/Roxio (let you write files to a CD like it was a floppy drive)
I replaced the CD burner with a USB flash drive that is setup to act just like a folder on the C: drive (google taught me how) backups are made to this folder (which is actually making the backup to the usb drive.  The reason for this trick is something learned from people who kept sticking different usb drives onto their computer; sometime they would show up as F: Drive    sometimes G: etc etc. This trick makes this one drive always have the path of   c:\backup

This is backed up again nightly to an internet backup site. (google IDRIVE or IBACKUP for examples there are many others too) Cost is low... if the server crashes I have the USB copy (and a ghost image on DVD too:-)  If the store burns down data backups are on the internet.

I  had a computer client run(crawl) into his burning office furniture warehouse filled with toxic thick black burning foam/ plastic smoke to grab his USB thumb drive with his daily quickbooks backup out of his computer.

This is a great idea. My client was more concerned about having their data on the internet. They also weren't so sure about not being able to check on the backup besides going in manually and checking.

The program that I wrote writes the files to a centralized FTP server and then it writes a record to a SQL server. A report is generated and delivered to helpdesk personnel. Each IT person is notified of the backup status every morning. It's an easy way to check 80+ stores/day.
