What to look for in a system?

We are opening a homemade wine, hops, and brew shop. Basically we will be selling ingredients for beer making and winemaking. All cash and carry with some items being sold by the pound. The hardest thing for me to wrap my head around is special orders. So if someone wants something not normally stocked, how do I order that, track it and fulfill the order? Are their any POS systems that fit that bill? Thanks!

As you had already indicated you ought to have a system which has a solid inventory management and a sophisticated order tracking.
